2010 Harvest News

Hello Everyone,
 
We have not long finished our 2010 harvest, we have pickled in vats 20 tons of fruit & made approx 4,500 ltrs of extra virgin olive oil. The fruit was beautiful, the rains we had last season definately helped the development. In the last few weeks we have had some good rains & it has been unbelievably cold, so the olive trees will love both - its just what they like in winter !
We are all excited about the new machine we have arriving from spain within the next few weeks. We have been wanting this machine for a long time and at last we have taken the plunge !
We believe it is the first in Australia to be able to pit, slice, halve & quarter olives making them suitable for all purposes from restaurants, deli bars, pizza houses and sandwhich bars. We will also be able to hand stuff them bringing in a whole new range. We of course have to learn to drive it first !!!
As the weather is so chilly we thought for the

  1. Tapenades make great bruschetta, pastry pin wheels, flavour for savoury tarts, stirred through pasta dishes & on pizzas.
  2. Substitute flavoured oils for fat when making cakes, muffins etc, it tastes fantastic. You can of course cook fish, chicken or curries & thai food with them, the flavour really enhances the dish.
Try one of Jill's favourite muffin recipes, our family loves them.
 
Jills Lemon or Lime Muffins
 
Wet Mix :   1/2  cup lemon or lime Infused E.V. Olive Oil
                       1/2  cup sugar
                   1/2  cup milk
                   1/2  cup yoghurt
                   2 x  Tsp grated lemon rind
                   2 x  Eggs   
 
Dry Mix :   2 x   cups S.R. flour 
                  1/2   Tsp baking soda   
 
Preheat oven 200 C
Beat together the oil, sugar and eggs then add the rest of the wet mix. Carefully Fold the dry mix into the wet mix.
Spoon into muffin pans & bake for 20 mins.
Dust with icing sugar while still warm.
Makes 12.
These are even great as dessert with custard or icecream. Enjoy !
